Okay,

We do not know much about the game, so no cheats so far.
You can choose 5 out of 80 traits.
I am not sure about the 3rd question, but probably.
You can make them model thin to morbidly obese.  For muscles you can make a sim as lanky as you want them to be or as muscular as you can make them. ;D
